Buttery Tea Ring and Butterscotch Chip cookies and Sweet Potato Muffins
I can't remember a day visiting gramma when there wasn't something baking(or just baked), or cooked or pickling. for that matter.
Often dropping by unexpected I'd be asked if I had lunch(or supper yet) and the house would smell of fresh canned pickles, or tomato soup, and almost always a muffin or cookie she tried the recipe of.
She always made extra...some for today...some to freeze for a few months from now and some I imagine for the visitors who frequented her door.
Buttery Tea Ring with Pecan Filling
1 pkg dry east
1/4 c. warm water
2 1/4 cups sifted flour
2 Tbsp sugar
1/2 tsp salt
1/2 cup butter
1/4 cup evaporated milk
1 egg
1/4 cup currants
Soften yeast in warm water
sift flour sugar and salt
cut in butter till fine
add milk, unbeaten egg and curants
add soft yeast and mix well
cover and chill 2 hrs
Divide dough in half
roll out 12 x 6 inch spread each will filling
Filling: cream well
1/2 cup brown sugar
1/4 cup butter
1/2 cup chopped pecans
roll up start with 12 inch side, seal, place in crescent or ring shape on foil lined cookie sheet
make cuts along outside edge, 1 inch apart within 1 inch of center. turn pieces to side.
Let rise in warm place about 45 minutes
Bake 20-25 minutes at 350°
Frost with vanilla glaze
Vanilla glaze:
brown 2 tbsp butter
add 1 cup powdered sugar
1-2 Tbsp evaporated milk
stir till right consistency
trim with candied cherries if desired

Butterscotch Chip Cookies
1/2 cup brown sugar
1/4 cup white sugar
1/2 xup butter
1 beaten egg
1/8 cup water
1/2 tsp vanilla
1 c oatmeal
1.2 tsp bkg soda
1 cup sifted flour
1/2 pkg butterscotch chips
1/2 cup chopped nuts
Combine all ingredients. Drop by teaspoons on greased pans.
Bake at 350° for 6-8 minutes

Sweet Potato Muffins
1 1/2 cups whole wheat flour
1 tsp bkg soda
1 tsp bkg powder
1/4 tsp salt
2 large eggs
1 - 1 1/2 cups mashed sweet potatoes
1/3 cup olive oil
1/3 cup honey
1/4 cup brown sugar
1 tsp vanilla
Whisk flour, bkg soda, bkg pwd and salt
In another bowl whisk eggs, sweet potatos, sugar, honey, oil, and vanilla
Slowly combine dry ingredients with wet ingredients and stir till evenly combined.
Divide evenly into muffin cups add ingredients if desired*
stir gently
bake 30-35 minutes 350° oven
*add apple, cinnamon, choc. chips, nuts, raisins...etc..
